After the "red offal" is removed, it is hung aside without further processing, while the "white offal" is processed immediately. First, the pig's stomach is cut off, the pig manure is emptied, the pig is turned inside out, and washed clean; the pig's small intestine is cut off and pulled up from one end, while simultaneously netting (coiling) it.

The key is to select the large intestine. The casing of the large intestine is very thin, and the "oil" (fat) attached to the outside of the intestine is very thick. You have to be very careful when selecting the "oil" so as not to break the thin intestine. Otherwise, the white fat will be difficult to clean when it gets stained with feces, and it will be worthless.

After removing the fat, turn the large intestine inside out, empty the feces, and rinse it clean. "Turning the intestines inside out" after slaughtering a pig is a skilled task.
