The difference in taste between Champagne and sparkling wine is that Champagne is more delicate, while other sparkling wines are more refreshing. Champagne is a product of secondary fermentation after the grapes have fermented, which produces bubbles.

To make fine champagne, you first make still, non-bubbly wine, then put it in a bottle, add sugar and yeast, and let it undergo a small-scale fermentation in the bottle to create bubbles.

Secondary fermentation is a crucial step in winemaking. The added sugar syrup, under the action of yeast, produces alcohol and carbon dioxide. Since the bottle is sealed, this small amount of carbon dioxide slowly dissolves into the wine. At this point, the pressure inside the bottle can reach approximately 5-6 atmospheres, which is why opening champagne often results in a large amount of bubbles.

Although champagne generally has an alcohol content of around 12-13%, which is not high, the carbon dioxide in the liquid can promote the absorption of alcohol into the bloodstream, making it easier to get drunk.

So although it tastes smooth, it's easy to get drunk on it. Sparkling wine, on the other hand, tastes sour and astringent, and it's also harder to get drunk on it.

"Drink less, what if you get drunk?"
