Chapter 49 Sweet and Sour Pork Ribs

Ye Ying hasn't had sweet and sour pork ribs in a long time, and she's craving them!

First, she chopped the ribs she had taken out of her space into small pieces of roughly the same size, soaked them in water, then washed another pot, lit a fire, rinsed the rice several times, put the rice in the pot, added a finger's width of spiritual spring water for an adult, or two to three fingers' width for a child, and simmered it.

The second step was to simmer the pork ribs. After that, she washed the ribs, which had been soaking for a while, cleaned them thoroughly, and set them aside. Then she washed and wiped the pot for making braised pork, added cold water, put the ribs in, along with three slices of ginger, five scallion segments, garlic slices, and a suitable amount of cooking wine to remove any fishy smell.

The third step is to turn the fire up high and bring the water to a boil. Once the ribs have changed color slightly, skim off the foam, continue cooking for 2 minutes, remove them, and then wash and wipe the pot again.

Fourth, put the ribs back in, add salt, chicken essence, cooking wine and enough spring water. Stir well with a spoon, cover the pot, bring to a boil over high heat, then reduce to medium-low heat and simmer for half an hour. Once cooked, remove the ribs, drain the water, and place them in a bowl for later use.

(The first rinse is to remove the fishy smell, and the second rinse is to let the flavor penetrate; the seasonings used are different.)

Fifth step, prepare the sauce. In a small bowl, add one spoonful of dark soy sauce, two spoonfuls of light soy sauce, two spoonfuls of white sugar, and three spoonfuls of vinegar. Stir well and set aside.

Step 6: Heat oil in a pot. Once the oil is hot, add chopped scallions, ginger, garlic, star anise, bay leaves, and a small handful of rock sugar. Stir-fry until fragrant and the rock sugar melts. Then add the reserved ribs and turn the heat to medium-low. Continue to stir-fry the ribs until both sides are browned.

Step 7: Pour in the prepared sauce, stir-fry evenly, turn up the heat to reduce the sauce, and then plate it.

Then, Yingbao made a few more simple dishes: shredded pork with garlic sauce, dry-fried green beans, hot and sour shredded potatoes, stir-fried bitter melon with eggs, cucumber salad... and fearing it wouldn't be enough, she also made two baskets of steamed buns.

Not long after the film was finished, the Ye family members who had been working in the fields returned. Smelling the aroma of meat and vegetables coming from the kitchen, Ye Yuanhang hurriedly returned to the courtyard gate and closed it tightly.

The younger children quickly fetched water and washed their hands, urging the adults to do the same.

It smells so good!

"It must have been Yingbao again. Fanfan, I'm coming..." Ye Mingchen was exhausted and hungry after a day of weeding. He washed his hands and couldn't wait for the others to dawdle, so he quickly slipped into the kitchen.

Just then, Yingbao was carrying dishes out, and Ye Mingchen dodged her by stepping aside.

"Hey bro, slow down!" Yingbao was startled by Ye Mingchen's reckless attitude towards food.

Before Ye Mingchen could realize his mistake, he heard:

"Brother Mingchen, don't walk so fast, wait for me and Zilin," Ye Yuezhou and Ye Zilin, who were a little over a month younger than Ye Mingchen, hurried behind.

Thankfully, Yingbao had practiced and reacted quickly, otherwise none of us would have had dinner today!

"You little rascals, what are you rushing off to? Be careful," Grandma Wang Cuihua anxiously reminded her from behind.

Ye Zilin and Ye Yuezhou were a little flustered, afraid that their grandmother would see them in the kitchen and scold them.

After being beaten countless times, Ye Mingchen, the young man, finally learned his lesson and became clever for once: "Grandma, we didn't do anything, we just came to the kitchen to help our little sister."
