After pickling the cabbage, Xu's mother began to prepare pickled radish.
"Jiawen, Jiaojiao, wash the radishes and cut them into long strips." Mother Xu said, pointing to a pile of radishes next to her.
Cheng Jiawen and Xu Qianjiao nodded, rolled up their sleeves and started working. Xu Qianjiao squatted on the ground to wash the radishes, and Cheng Jiawen was responsible for cutting the radishes into strips.
Xu's mother prepared the vinegar water for soaking the radish, one bowl of vinegar and one bowl of water, then added a small amount of sugar, brought it to a boil, and set it aside until it cooled down before use.
Xu's mother went to the cellar and took out a handful of chili peppers, washed and chopped them, and set them aside.
"Mom, the radishes are ready." Cheng Jiawen brought a large plate of radishes to Xu's mother. Xu's mother looked at the radishes in the basin and nodded with satisfaction. "Add some salt to marinate them. Then go to the cellar and get the pork out. We can make the sausages and bacon together at the same time."
"good."
Cheng Jiawen scooped a few large spoonfuls of salt into the basin and stirred it evenly with his hands. Xu Qianjiao went to the cellar and took out the pork that Xu's mother had put there earlier.
"Old lady, I'm back." Father Xu came in from outside, carrying a big basket and pushing a bicycle.
He parked his bicycle at the edge of the yard, put down his backpack, took out a bunch of pig intestines from it and handed them to Xu's mother. "Here, I bought the pig intestines you asked me to buy."
Mother Xu took it and examined it, then nodded with satisfaction, "Not bad, quite fresh."
"Mom, why didn't you tell me that you wanted pig intestines? I have a friend who buys pork in the city. He has a lot of pig offal there, and I can take it directly." Cheng Jiawen said with a smile looking at Xu's mother.
Xu's mother waved her hand. "Well, your father said that his brother's village was slaughtering pigs and didn't want the pig intestines, so I asked him to go over there and buy them back with some money."
"That's fine. From now on, if you need pork or something, just call me and I'll find a way to get it back."
"Okay." Mother Xu nodded with a smile, "Don't worry, we are all family, I won't be polite with you."
Hearing these words, Cheng Jiawen's heart became warmer. They were like a beam of bright sunshine, penetrating the haze in his heart, making him feel extremely warm and moved. Every word was like a shining star, illuminating the deepest corner of his heart.
At this moment, he finally felt that he had a family. These were the family who cared about him, the family who would "bother" him, the family who would give him warmth, not the family who would only ignore him, not the family who would only want to take things from him.
Thinking of this, the corners of his eyes gradually became moist, but before he had time to feel too much, he heard Xu Qianjiao calling him.
"Cheng Jiawen, come and help." Xu Qianjiao walked out of the backyard with great effort, carrying a large basket. The basket was very heavy, with half a pig in it. She had to stop to rest for a while when she was halfway through. When she reached the front yard, she quickly called out to Cheng Jiawen to come and help.
Cheng Jiawen walked over quickly, took the basket, and carried it to the front yard with one hand. Xu Qianjiao followed him breathlessly, and said coquettishly, "This is too heavy, it weighs dozens of kilograms."
"Of course, such a big piece of pork is so rare." Mother Xu looked at the big piece of pork and couldn't help but raise the corners of her mouth. She hadn't seen such a big piece of pork for a long time.
Before they split up the family, when they distributed pork at the end of the year, the whole family only got a few pounds of pork, and each person got a piece. Now there is so much pork, we can make some bacon and sausages, and we will have enough meat to eat all year round.
"Come, Jiaojiao and Jiawen, cut the pork into small pieces. Use the pork leg meat to make sausages and the pork belly to make bacon. Then leave some fresh ones to eat during the New Year." Xu's mother said as she stirred the radish next to her.
The radish had been pickled for more than half an hour, and the time was almost up. She poured out the pickling water in the basin, put the radish into a clay pot, added garlic slices and pre-cut peppers, and then poured in the prepared vinegar water, sealed it, and waited for a few days before eating it.
On this side, Cheng Jiawen skillfully divided the pork according to Xu's mother's instructions, while Xu Qianjiao used a small clip to remove the pig hair.
Seeing that the two men cooperated well, Xu's mother went over to help Xu's father scrape the pig's intestines.
First, tear off all the fat on the outside of the pig intestine, then turn it over and clean it, add a little wood ash, rub it clean, then add some salt and rub it again, and rinse with clean water several times until the water becomes clean.
Then turn the small intestine back and slowly scrape it with the back of a knife until the meat inside is scraped clean.
By the time Mr. and Mrs. Xu finished making the casings, the sun was already high in the sky, emitting dazzling light.
"It's getting late. Let's have lunch first and do it later." Mother Xu stood up and patted her stiff waist, saying gently.
Xu Qianjiao plucked the last strand of pig hair. "Huh, finally done. I'm so tired." She stretched and adjusted her neck, which had been stiff from looking down. "So what are we having for lunch?"
"Well, let's eat dumplings. We just happened to have pork. Let's have sauerkraut dumplings for lunch." Mother Xu said as she looked at the processed pork.
Xu Qianjiao's eyes lit up when she heard this. She smiled and said excitedly, "Okay, the sauerkraut dumplings my mother makes are the best."
"Little flatterer, go to the cellar and get some sauerkraut. Jiawen cut some pork and chop it up. Second Xu, go and knead the dough." Mother Xu quickly assigned the tasks to several people.
When everyone heard Xu's mother's instructions, they all took action and did what they had to do.
After Xu Qianjiao took out the sauerkraut, she washed it with clean water, drained it, chopped it up, and put it in the pot to stir-fry until fragrant. "Mom, the sauerkraut is ready."
