Even Mingyue and Di Hu on the second floor widened their eyes when they heard the conditions of this round of competition.
Di Hu clenched his fist and put it against his mouth.
He was once again thankful that he had reached the second floor.
A cheese soufflé is difficult enough.
Three more to do in such a short time.
It's just painful*3.
Mengya and Lan Qingying stood back at the kitchen counter.
"Start now!"
Mengya quickly started beating the eggs, separating the egg whites and yolks with her hands, pouring the egg whites into a food processor and starting to beat them.
Lan Qingying was a little flustered. She first picked up the butter, cut a piece and threw it into the pot. After the butter melted, she added flour and milk, stirring with a spatula to prevent the flour from clumping.
Only then did she realize that she had forgotten to separate the eggs, and hurriedly put down the batter and started beating the eggs.
Mengya's time management here is obviously much more reasonable than Lan Qingying's. She starts to fry the batter and then adds milk. After stirring evenly, she puts it aside to cool down slightly. When the egg whites are beaten, she greases the mold with butter and sprinkles it with cheese powder.
Mengya prepared four molds and planned to bake four soufflés, so that if one of them was not baked well, she could replace it.
However, she made a small mistake when making the batter. She forgot to turn off the heat when adding cheese to the batter.
Adding cheese while it is still hot will cause the fat to separate and the mixture to separate and form particles.
"You'd better put your soufflé in the oven within 5 minutes. Remember, the soufflé needs to be baked for at least 15 minutes. Pay attention to your time!"
The judges reminded from the stage.
Now both of them have beaten the egg whites, and add the beaten egg whites to the cheese paste in batches, stirring gently to ensure the batter is fluffy.
"Be gentle and soft, otherwise the soufflé won't expand after the egg whites deflate." Mengya reminded herself silently in her heart.
Lan Qingying mixed the batter, put it aside and started to butter the mold.
Mingyue and Di Hu were watching anxiously from the second floor.
"Qingying is too nervous. She has prepared the mixture but hasn't greased the mold with butter yet." Di Hu whispered to Mingyue.
Mingyue also felt a little regretful. "The butter should be applied when beating the egg whites. Otherwise, the mixture will be suffocated by being exposed to the heat of the kitchen for a long time, and the soufflé baked later may not be very fluffy."
The judges certainly noticed this, but no one spoke up to remind them.
Once the arrow is shot, there is no turning back.
Even if I tell her, there is no time to start over.
"Attention! It's time to put your soufflé in the oven!"
Mengya has put four soufflés into the oven. She also took special care to place the baking tray in the middle of the oven to prevent the soufflés from being affected by the oven fan.
Lan Qingying was a step slower and put her three soufflés into the oven a minute later.
Now it's just a matter of waiting for the soufflé to puff up in the oven.
Mengya couldn't see the condition of the oven, so she closed her eyes silently and followed the method Mingyue taught her before.
Mingyue said that you can judge the condition of the food without looking at it.
For example, when cooking rice, you can hear the gurgling sound in the pot gradually stop, and you can smell a hint of rice fragrance in your nose. This means that the water has been boiled dry and it can be served after simmering for a while.
The same goes for things in the oven; the smell of the food after it is baked is different.
Mengya tried to do as Mingyue said, and as time passed, she actually smelled the salty aroma of cheese coming out of the oven.
Coincidentally, the oven made a beeping sound, and the set 15-minute countdown ended.
Mengya smelled the current smell and prepared to bake it for another 30 seconds.
After 30 seconds, Mengya took the soufflé out of the oven and transferred it to a small plate.
She just touched it lightly and the soufflé was just the right amount of fluffy.
Lan Qingying took her soufflé out of the oven. Her soufflé also puffed up successfully, but not as high as Mengya's.
The two placed their three soufflés in the front, and the three judges walked down together, carefully observing the appearance of each soufflé, which was golden in color and expanded to two fingers higher than the rim of the cup. Finally, they tasted the soufflé.
"You all have done a great job and thank you for your hard work. Now we need some time to discuss this."
The judges went to the back to discuss.
“They both performed very well this time.”
“Mengya’s seasoning is very good, but you can taste a little grainy when you eat it.”
"But her soufflé is fluffier than Lan Qingying's."
"Lan Qingying must have collapsed a little because the egg whites in the mixture deflated."
"Her soufflé is still a little watery, so the shape isn't quite right."
"But her soufflé is better seasoned than Mengya's, and the texture is smoother, with just the right amount of cheese."
"At this point, we can only decide based on the details."
After some tasting and discussion, the judges finally came to a conclusion.
Mengya's cheese soufflé was slightly better and she successfully advanced to the finals.
Lan Qingying lost narrowly and was eliminated in the semi-finals.
Mengya opened her arms to Lan Qingying, and the two hugged each other tightly.
After spending so much time together, they had already become friends. Now that they knew Lan Qingying was leaving, they were naturally very reluctant to let her go.
"Lan Qingying, you are an excellent contestant, and you have a strong will to never give up.
