The most important thing here is to seal the opening well, otherwise the air will escape and the pancake will not puff up.

After it's done, brush it with a layer of oil, cover it, and let it rest for another 15 minutes. Alternatively, you can freeze it in a well overnight.

Take out the rested dough and carefully roll it out, making sure to leave a little space around the edges and don't roll it all the way to the bottom. Heat the pan, add a little oil, and then you can put the dough into the pan to start frying.

When frying, be careful to flip it over to ensure even heating on both sides. As it heats up, the pancake will gradually puff up and grow bigger.

At this point, you can use chopsticks to poke the hole, pour in the beaten egg, then flip it over. Once the sealed egg is cooked, you can gently lift the pancake and let the egg mixture flow to all the corners. Continue flipping it over until the egg mixture inside is fully cooked, then it's ready to be taken out of the pan.

The cooked pancake looks translucent and soft, and it tastes good even without any sauce. The thin pancake is filled with eggs, and one bite is very satisfying.

Ruyi tried making three egg pancakes, three scallion pancakes, and three rabbit and vegetable rolls. Unsurprisingly, they received praise from her family, who all expressed great confidence in these snacks.
