There are only two pots in the house, and everything has to wait until the rice is cooked and one pot is empty before we can continue.
Pei Yuezhi first chopped the meat filling. The pork belly with alternating layers of fat and lean meat was the perfect choice for making stuffed green peppers.
First, cut the meat into small pieces, then mince it for easier. It doesn't need to be minced too finely. Then you can season it.
First, chop some scallions and ginger, then crack in an egg, followed by a little white sugar, five-spice powder, light soy sauce, oyster sauce, and cornstarch as needed.
Stir thoroughly until the meat filling clumps together, then set aside.
"Mom, we're back! What are you making? It smells so good!" Fan Mu's clear voice rang out.
It was Liu Yuanyuan who returned with the children.
Pei Yuezhi hugged Fan Mu, who rushed towards her, pinched her little cheek, and said with a smile, "Mu'er is back. Mother made meat today. Why don't you go and play with your brother and uncle?"
Fan Mu smiled very happily: "Mom, I saw Uncle as soon as I came in. I missed Uncle so much, and I also want to eat meat. Mu'er is especially happy today!"
"Alright, as long as Mu'er is happy. Go ask your uncle to pick some sweet potato seedlings, wash them, and bring them over. I'll cook a couple more dishes and then we'll have dinner."
Pei Yuezhi really loves this daughter. She's so cute and adorable, and most importantly, she's incredibly well-behaved. She never cries or makes a fuss, and she does whatever she's asked to do.
They were so fond of it that they kissed it several times before letting it go.
Pei Yuezhi thought for a moment and realized there was still time, so she decided to go out and take a look, and also introduce Liu Yuanyuan and her younger brother to each other.
As soon as I came out of the kitchen, this was the scene I saw: Li Nian'an and Fan Chao were squatting in the field picking sweet potatoes, Pei Yunzhi was drawing water by the well, Fan Mu was talking to his uncle, and not far away was... well, um.
Liu Yuanyuan was watching Pei Yunzhi with a silly grin on his face...
Pei Yuezhi quickly went over and pulled Liu Yuanyuan's hand: "What are you doing? Why are you grinning like that? It's not good if someone sees you!"
Liu Yuanyuan put away her smile and replied, "Don't worry, I know what I'm doing. I won't look at him again."
"Besides, how come you have such a handsome younger brother? You never told me." Liu Yuanyuan's face clearly said, "You're not being fair."
"Isn't this the original owner's younger brother? I just transmigrated and my memories aren't very clear. I almost didn't recognize him when I saw him today," Pei Yuezhi explained.
"Let me tell you..." Pei Yuezhi whispered about her brother's background, including his divorce, how his wife took his money to give to his brother-in-law, and so on.
Liu Yuanyuan grew increasingly angry as she listened, and in her agitation, she exclaimed, "This is outrageous! How could she do this!"
The people in the courtyard all looked over, and Pei Yuezhi quickly pulled her aside, telling her to keep her voice down.
"I just couldn't stand it either. Isn't this a case of a brother-supporting demon? Your brother has lost all his money, can't go to school, and all the money he earns has to go to buy medicine for our father!" Liu Yuanyuan said indignantly.
"You all get to know each other, I have to go back and cook." Pei Yuezhi watched as the others washed the vegetables and took them to the kitchen, then got up and went back to cook as well.
Just as Pei Yunzhi came out of the kitchen, Pei Yuezhi pulled him back.
“Yunzhi, the one outside is my sister’s good friend. Her name is Liu Yuanyuan. She has helped my sister a lot. Even when I go to town to sell food, it is she who supports me.”
“Sister’s friend must be a very good person. Yunzhi will go and say hello.”
Pei Yuezhi nodded and went back to continue cooking. By then, the rice was cooked and ready to be served and stir-fried with vegetables. The pork knuckle would be ready in about half an hour.
I bought two coins' worth of green peppers from the system store. I tried to choose long and straight peppers so they would be easier to stuff. After washing and removing the veins and seeds, I cut them into three sections.
Stuff the filling with meat, then put it in a pan and fry until it has a tiger-skin pattern. Add chopped garlic, and you can add more garlic.
After sautéing the garlic until fragrant, add light soy sauce, a little dark soy sauce, oyster sauce, and a pinch of sugar. Then add about half a bowl of water and simmer for six or seven minutes, remembering to stir occasionally to prevent burning.
During this time, Pei Yuezhi also cut potato shreds, rinsed them several times with cold water, soaked them in water, and then they could be stir-fried directly after a while.
Once the time is up, turn up the heat to reduce the sauce, sprinkle with a little MSG, and leave some sauce to mix with rice. This dish is especially good with rice.
Stir-fried potato shreds are very simple. First, chop some garlic and chili peppers. Then, heat oil in a wok, sauté the garlic and chili peppers until fragrant, add the potato shreds, stir-fry over high heat, add salt and MSG, and just before serving, drizzle some vinegar along the edge of the wok, stir-fry evenly, and serve.
These sweet potato shoots are even simpler to cook. Sauté garlic until fragrant, add the sweet potato shoots, stir-fry until just cooked through, add salt and MSG, and don't cook for too long before serving. They're sweet and refreshing.
Pei Yuezhi glanced at the stewing pork knuckle, which was already very tender. She took out the knuckle, picked out the spice residue, and boiled the soup over high heat until it was thick and thick, then poured it over the knuckle.
First, cut the pork knuckle into smaller pieces to make it easier to pick up. Then, find an empty plate and fill it with some pork knuckle meat and stuffed green peppers, intending to give some to Pei Yunzhi's father when he returns.
Ready to eat!
The group sat upright at the table. When they saw Pei Yuezhi bring out the braised pork knuckle, they all got up to get chopsticks, serve dishes, and fill rice bowls.
Since no one touched their chopsticks, Pei Yuezhi assumed they were being shy, so she used chopsticks that hadn't been used yet to put a piece of braised pork knuckle on each of the three children's plates.
"Hurry up and eat. It's been so long since you've had meat. Try some."
"Thank you, Mother. It's just a little hard to believe. We weren't like this just a few days ago. You've worked so hard." Fan Chao looked at the sumptuous meal in front of him and thought about a few days ago.
Back then, my mother was still quiet and reserved, never leaving the house. I never imagined that in just a few days, their family would change so much. My mother must have put in a lot of effort; she really worked hard.
Fan Chao felt more and more sorry for his mother's hard work, so he put a piece of braised pork knuckle on Pei Yuezhi's plate.
Seeing his brother serving food to their mother, Fan Mu wasn't to be outdone: "Mom is the best, and her cooking is the most delicious."
As he spoke, he also picked up a piece of braised pork knuckle and gave it to his mother.
Then Li Nian'an picked up some meat and said, "Aunt Pei, you've worked so hard. You not only cook for us every day, but you also go to town by yourself. Please eat more."
Pei Yunzhi: "Sister's cooking is so good. Seeing that your life is getting better and better, I feel much more at ease. Sister, have some meat."
The rice bowl, which was already full, now looked like a small mountain with the addition of these four pieces of pork knuckle.
"Yueyue, here's a piece of lean meat for you, you like lean meat." Liu Yuanyuan also joined in the fun, adding another layer to Pei Yuezhi's little mountain.
Pei Yuezhi was both amused and exasperated: "Alright, you guys eat quickly, it'll get cold if you don't eat now. I can't eat this much meat by myself, you guys eat quickly."
He put the large pieces of meat back on the plate, saying, "Don't be disgusted, I haven't eaten yet, you guys hurry up and eat."
Only then did everyone pick up their chopsticks.
Liu Yuanyuan first picked up the braised pork knuckle. The slight sweetness of the rock sugar, combined with the aroma of the pork knuckle, was just right to cut through the richness. The skin of the pork knuckle was incredibly tender and melted in her mouth, while the tender lean meat was still pink.
I ate a big piece of meat, skin and all, and it was incredibly delicious.
