Let's make sweet and sour pork ribs that kids would love, then braised chicken, and then minced pork with eggplant and stir-fried cabbage.

To make this braised chicken, you need to marinate it first, clean the fresh chicken thoroughly, and scald the surface with boiling water.

Then add light soy sauce, dark soy sauce, oyster sauce, and some wine, preferably rice wine.

Then add salt and white pepper powder, and marinate for at least one hour.

After marinating the chicken, I started steaming the rice. This time, Pei Yuezhi brought fine rice, so I didn't need to soak it for a long time beforehand.

Next, Pei Yuezhi prepared to make sweet and sour pork ribs.

After blanching the pork ribs, rinse them with warm water and then start cooking.

Add scallions, ginger, and star anise, then add boiling water and simmer over low heat for about forty minutes. This method of making sweet and sour pork ribs can also be used to make a pot of pork rib soup, which is very suitable for Pei's father to drink.

This sweet and sour pork rib recipe is quite simple; there's no need to caramelize the sugar, just use dark soy sauce instead.

Prepare a sauce by mixing dark soy sauce, light soy sauce, sugar, and white vinegar, then add water.

By the time the ribs are cooked, the chicken should be marinated as well.

The Pei family happened to have a clay pot, so they added some oil, onions, scallions, ginger slices, and garlic to it.

Then put the marinated chicken in and pour in the marinade.

No need to add water, just cover and simmer. This chicken is a bit big, so simmer for about forty minutes.

After the ribs are cooked, you can skim off the solids from the broth, add some salt, a little MSG, and chopped green onions.

Without adding oil to the pot, directly add the ribs and stir-fry until the moisture evaporates. Then add a little oil and stir-fry again, followed by some ginger. Stir-fry until fragrant, then pour in the sauce.

Simmer over low heat for another ten minutes, then add firewood and reduce the sauce over high heat.

Just before it's done cooking, drizzle a little vinegar around the edge of the pan, then immediately remove it from the heat.

The vinegar in the sauce has evaporated during the stewing process. If you don't add vinegar from the side of the pot, the sweet and sour pork ribs won't have a sour taste.
