Because of the times, people were not very wealthy, so the chef divided the smoked fish into small pieces and sold them individually. The price was cheap and it became a must-order for every table.
How could she miss such a delicacy? She ordered one to try. The portion of Hangzhou dishes was not very large, and her northern stomach was a little unsatisfied.
The color of the sauce is rich and red, and the taste is fresh and sweet. Braised fish is different from the way it is cooked in northern China. In the north, the fish is lightly fried in oil to set, and then various seasonings are added and simmered on low heat until the soup is thick.
It is said that experts can cook without oil. Just heat the pan, put the fish directly into the pan, simmer both sides until slightly golden brown, and then simmer over low heat with seasonings.
The ones in Hangzhou are more tender, with rich broth on the outside and white and tender meat on the inside. The dishes here are sweeter, and sugar is absolutely indispensable for any dish.
