It was not until the time of writing this book that the author asked some elders about this question: why do we have to eat cornmeal and white flour is scarce when the same land is used to grow two crops?

The answer is that the crop yields at that time were completely different from those now. Although wheat was intensively planted in the early days of liberation, there were few high-quality varieties at the time, and the wheat yield per mu could only reach 200 to 300 kilograms, while the corn yield per mu was much higher, 700 to 800 kilograms, or even more than 1,000 kilograms. Of course, the current corn yield is even higher.

So we can have enough food and clothing now, and can eat white flour or rice whenever we want, and we must thank agricultural scientists.
