Su Le and his family of three followed Zhang Jing to the dessert shop. Su Le took out the necessary tools and started with a simple old-fashioned cake, explaining each step to them.
"First, wipe the three large basins clean, without any water in them. Take out 8 eggs, separate the egg whites and yolks. I have a special separator here, which can be placed directly on this basin. After beating an egg, put the yolk in another basin. Next, weigh the grams, 105 grams of low-gluten flour. Read the words on it carefully. Don't take the wrong one. 15 grams of corn starch. Zhang Jing, bring me the corn oil," Su Le shouted to Zhang Jing beside him.
Zhang Jing held the pot and heated the corn oil. Su Le poured it into the rice noodles. "If it is 90 grams of corn oil at 70-80 degrees. Then stir it into a fine consistency without any particles, and then add 80 grams of milk. Stir until it becomes sticky, then pour in the egg yolks we just separated, stir in a Z shape until it becomes fine and smooth, then you can put it aside, take the egg white, pour in 80 grams of white sugar, one gram of salt, and a drop of white vinegar. Then use this egg beater to stir until you take out the egg beater. There is an inverted triangle on the egg beater and a right triangle in the basin, which means it is ready. Take out another one-third and put it into the egg yolks we just stirred. From the bottom Flip it upside down until the color is even. Pour it all into the egg whites and continue as before until the color is even. Find an 8-inch cake pan, line it with two layers of baking paper, and grease it. Pour everything you just mixed into it. For the remaining little bit, add one gram of cocoa powder (the brown kind). Stir it, then pour it into the baking bag (the one I just mentioned the tool by name), make a slit, and draw a Z shape on the surface. Finally, take a toothpick and draw the Z shape in the opposite direction. Place it in the oven. Preheat the oven to 150 degrees Celsius for 70 minutes.
Several people were so anxious that their fingers were about to fly. Su Le was speechless watching, "Did I do it too quickly?"
"No, Sister Le, we want to see how you stir it and write it down, so you are a little slow." Zhang Jing said embarrassedly.
"Okay, I'll go back and find you a book, and you just follow it. It doesn't matter if you fail the first few times. This thing is just practice makes perfect. Practice more and you'll get it. Cakes usually follow these steps, more or less the same, but when you make them, you can't make them more or less the same, you have to make them exactly the same. The proportions must be according to the above. Okay, you can try it first. When you're done, you can try it." Su Le gave them his seat.
Some of them were washing pots and pans, and Zhang Jing was the first to practice. While beating an egg, he dug his finger into it and cracked the yolk. "Look at Sister Le, it's so easy. I didn't expect beating an egg would be so difficult for me," Zhang Jing said, looking at the yolk in the basin in frustration.
Su Le said, "You can all try. Start by beating the eggs. It doesn't matter if the yolks break. Get another bowl and gather them together. You can bring them to Zhang Liang and the others at noon for cooking."
Everyone lined up, each holding a bowl, and began beating the eggs. Only one girl, Ma Qiao, could separate them. Ma Qiao then moved on to the next step.
After hitting five or six times, they began to master the technique and started the next step.
"Honey, please deliver this basin to the restaurant, and don't forget to bring it back." Su Le said to Li Zichen.
Li Zichen held Li Ningwei's hand and they walked over together.
Su Le was there, guiding them. As long as they could beat the eggs, the rest would be easy. Su Le had prepared a large three-tier oven, each one accessible. Ma Qiao placed her cake inside. Then came another employee.
Zhang Jing ranked third.
Everyone sat aside and waited for the time to pass, then recalled their own actions and kept them in mind.
70 minutes later, Su Le took out his cake and everyone stood up at once. Among the onlookers, Li Zichen was pushed to the back.
Su Le patted it gently, "See? If it goes like this duangduang, it will be successful."
“Smells so good!”
"Can I try it?"
Su Le took out a piece and asked them to divide it among themselves. Everyone tore off a piece and quickly divided it all. "It's delicious. Isn't that what I do?"
"My steps just now should be correct."
“I’m so looking forward to it!”
Su Le took out the second piece and gave one to Li Ningwei, another piece to Li Zichen, and prepared to pack the rest to take back for his family.
Soon Ma Qiao took out hers as well. She imitated Su Le's actions and clapped her hands, saying, "Very good, very good! I succeeded on the first try."
Ma Qiao smiled beautifully, "Haha, I am quite talented."
Su Le smiled and said, "Everyone can take the first piece of cake you make back home. Share it with your friends and family."
Ma Qiao tore off a small piece and tasted it. It tasted just like Su Le. She happily packed it up and put it in her cashier's drawer.
After putting them in and taking them out one after another, two cakes collapsed. Su Le asked directly, "Didn't you two heat up your corn oil?"
The two nodded, their heads drooping. "Don't skip a single step." Su Le looked at them seriously. The two nodded.
"You will learn this today. Everyone can start making it and start selling it in the afternoon. One piece will sell for three dollars." Su Le said to everyone, and gave Zhang Jing a money box with a thousand dollars in reserve money, plus an account book to keep statistics of what was sold.
Zhang Jing nodded, took it and connected it with Ma Qiao.
