Roll each piece into an oval-shaped dough sheet, pick it up with your hands and stretch it. The dough sheet gradually becomes thinner and longer, and finally it is stretched into long noodles.

Once the water boils, put the whole pulled noodle into the water and stir it gently with chopsticks. The white pulled noodle will tumble in the water and soon float to the surface, no longer sinking.

Use a few chopsticks to scoop the pulled noodles into an empty bowl, add two spoonfuls of egg sauce, and stir well.

The slightly hot temperature, the chewy pulled noodles, the savory egg sauce, and the crunchy scallions make for a truly satisfying bite.
