During this time, place the proofed dough on a work surface and sprinkle with wheat flour to prevent sticking.

Use a rolling pin, or rather, this long stick, to roll the dough into a thin sheet.

Remember, the key to rolling out dough is to roll it from the center outwards, and to sprinkle dry flour as needed to prevent sticking.

After rolling out the dough, fold it up and cut it into thin strips about two millimeters thick. Then shake the thin noodles to separate them and sprinkle them with dry flour for later use.

By this time, the steak in the pot was almost cooked. Season with salt, add golden beans, and then add water to cover all the vegetables.

Then spread the noodles out on top, cover and simmer over medium heat for three minutes.

Open the lid, use chopsticks to loosen the noodles, then cover again and reduce the heat to low to simmer until the broth is reduced and thickened.

When Yu Shan directed Bo Yiyan and Hua Jingyishu to cook, his demeanor was calm and composed, as if he was used to directing others.
