There is also a premium variety of crab called the butter crab, which has even more abundant crab roe, to put it bluntly, the roe is so oily it's practically dripping with oil.

The difference between yellow butter crab and regular mud crab lies in their joints. If you break the crab legs apart, the part where the crab legs connect to the body is yellow, and the joints on the crab legs are also yellow.
