Chapter 103 Chive Egg Pancake, Dumpling Soup



All the mixed noodles are sold out today. It’s the first day of sales, so we didn’t prepare much. We prepared one pot of each kind, which can only make more than 20 bowls. Of course, the scrambled eggs with tomatoes are not included.

Lin Yan cleaned and chopped the chives, put them in a bowl, added a little salt and oil, and stirred evenly. Then he added flour and an appropriate amount of water and continued stirring. Finally, he beat in an egg and stirred it into a thick paste. He put a little lard in the pan, and after the oil was slightly heated, he scooped the chive batter into the pan, fried it on low heat until one side was cooked, then flipped it over and fried it until both sides were golden brown.

Lin Yan made a simple version of a chive and egg pancake. The more complex method involves kneading the dough, then forming small pieces and rolling them into thin slices. Sprinkle the dough with seasoning, chopped green onions, and chives, then roll it into long strips, flatten it, and roll it into a round pancake. This method is more time-consuming. Lin Yan wanted to make a quick dish today.

Soon, more than a dozen leek pancakes were fried. He covered them with a lid to prevent them from cooling down too quickly, and then started to make the dumpling soup.

Dumpling soup is also easy to make. Put flour in a bowl, slowly add water, and stir with chopsticks until it becomes small lumps.

Chop tomatoes into small pieces. Wash and chop green vegetables. Finely mince scallions and ginger, and set aside. Beat an egg and mix well. Set aside.

Pour a spoonful of lard into the pot. Once the oil is hot, add chopped scallions and ginger. Sauté until fragrant. Add the tomato pieces and stir-fry until the juice is released. Add an appropriate amount of water and bring to a boil. Slowly pour the dough into the pot, stirring gently with a spatula to prevent the dough from sticking.

After the dumplings are cooked, pour the egg mixture evenly into the pot, stirring as you pour until the mixture forms egg drops. Finally, add the chopped greens, season with salt and soy sauce, stir well, and serve.

Lin Yan had just eaten scallion oil noodles that afternoon, so he wasn't very hungry yet. However, the dumpling soup had whetted his appetite. He called out to the kitchen door, "The food is ready, wash your hands and eat."

Those who were still working stopped what they were doing, fetched water and washed their hands, and those who were idle helped to serve soup and pancakes.

"Dad and Mom, eat more. There's more soup in the pot."
