A spoonful of it is as thick as fat, fragrant but not greasy, and exudes the flavor of the old Suzhou people.

The fourth dish is rice wine lees grass heads. The emerald green grass heads are soaked in rice wine lees juice. When it is served, there is a faint aroma of wine with a slight bitterness, which is elusive like the return of an old dream.
