Next, add the egg whites and salt to another bowl. Use another mixer to beat the egg whites until small white bubbles form. Add the granulated sugar and continue beating. The sugar can be added in small amounts several times to ensure it is fully incorporated into the egg whites. Beat until you have a fine, soft foam, as smooth as cream. The meringue is now ready.
The chocolate is heated and softened into a sauce, then mixed evenly with the buttercream. Next, the meringue and flour are added, and the mixture is constantly folded in, but not overmixed, until the buttercream and meringue are completely covered with the color of the chocolate and become a dark brown dough. This is the base of the Sachertorte.
Pour the cake batter into the prepared ceramic bowl and press the surface flat.
Sangye went to preheat the oven.
When she returned to the kitchen, Lin Changli was standing next to the ceramic cup, holding a glass of iced pineapple plum tea. He had even put pig-shaped ice cubes that Sangye had frozen the night before into the glass! Those were prepared by Sangye for Wu Jianing.
Pineapple plum tea is an improvement on sparkling water. Kuwano discovered that once sparkling water is exposed to air, the bubbles quickly come into contact with and blend with the air, losing its original refreshing taste and becoming overly sweet.
