When I was a child in my previous life, this kind of bitter vegetable was everywhere in the mountains and fields. My mother would dig a basket of it every day and bring it home to blanch and eat it cold.

Whether bitter herbs are eaten cold or soaked in water, they are good and can reduce heat and relieve coughs.

The leftovers can be dried and stored, or soaked in water and drunk in winter.
