Since you are planning to cook for yourself, you need to buy the ingredients from the grain and oil station.
Food supplies were rationed. Adult women in Beijing received 28 kilograms of grain per month, adult men and employees of public institutions received 32 kilograms, and factory and mine workers received 38 kilograms.
Although Jianshu hasn't started working yet, he is already an employee of the department store and can get 32 kilograms of food per month.
These days people don’t have much oil in their stomachs, so these foods alone are not enough to fill their stomachs, not to mention that most of them are coarse grains, and there are not many fine grains.
Many people in later generations think that sweet potatoes taste good, but for those who have experienced that era, they no longer want to eat sweet potatoes after their lives have improved. They have been hurt by eating them and are afraid of eating them.
I bought grain and oil, and with the "Beijing Residents' Non-staple Food Purchase Certificate" I bought vegetables as well as salt, sugar, sauce and other condiments, which were also in fixed quantities.
This is definitely not enough for Jianshu, but Jianshu does not rely on this. It mainly uses space supplies.
The food, vegetables, seasonings, etc. filled a whole backpack, which was quite heavy.
After carrying the things back, Jianshu started preparing dinner. He hadn't cooked in a few days, so today was a good time to try out LPG. How was it different from his previous life?
I haven't eaten pickled fish for a long time. I miss the sour and spicy taste very much. I will make pickled fish tonight.
First, I cooked a pot of rice in the rice cooker, and then I fished out a three-pound grass carp from the pond in the space.
Scrape the scales and gills of the fish, clean it, chop the fish bones into pieces, cut the fish meat into slices at an angle, and put them into different bowls.
Jianshu prefers to use grass carp for pickled fish, and does not like the boneless Basa fish, which he feels tastes bland.
Add enough clean water to the fish meat and fish bones and soak them, which can better remove the fishy smell.
Then start preparing the side dishes. Take out pickled cabbage, bean sprouts, dried chili peppers, Sichuan peppercorns, green onions, etc. from the space.
Cut the pickled cabbage and dried chili into sections and set aside. Take out the soaked fish bones and fish meat and wash them.
After cleaning, season the fish with salt, pepper, starch, egg white, etc.
Mix evenly with batter so that the fish will be more tender and smooth.
Heat oil in a pan and add the fish bones. Fry until both sides are lightly browned. Pour freshly boiled water into the pan to make fish bone soup.
Cover with a lid and simmer over high heat for about 10 minutes.
Heat oil in a pan again. After the oil is hot, pour in the onion, ginger, garlic and pickled pepper segments and stir-fry until fragrant.
Then pour the sauerkraut in and continue stir-frying to bring out the aroma of the sauerkraut.
Pour the fish bone soup just cooked into the pot, then put the soybean sprouts into the pot, cover the pot, and continue cooking for 2 minutes until the soybean sprouts are cooked.
Then prepare another basin, use a colander to scoop out the fish bones, sauerkraut and bean sprouts and put them into the basin.
There is still fish soup left in the pot, add appropriate amount of salt, a little chicken essence, a little pepper and white vinegar to season it.
Put the fish fillets into the pot, cook them for one minute, then push them gently with a spatula, continue cooking for about half a minute, and then pour the fish fillets and the fish soup into the basin.
Heat some oil, add peppercorns and dried chili segments into the oil, fry until the spicy aroma comes out, then pour it over the fish fillets to fully stimulate the aroma of the ingredients.
The pickled fish is ready, it smells so good that it makes your mouth water.
Just as I was about to eat, I heard knocks on the door.
Jianshu ran to open the door and saw Aunt Chen who had come this afternoon, holding a bowl of meatballs in her hand.
Aunt Chen: "Shushu, when I heard some noises at your house, I knew it must be you. I made some meatballs at home, so I sent some over for you."
Meat is hard to buy these days. Many families don’t eat meat for ten days or half a month. Jianshu doesn’t lack meat, so he feels embarrassed to ask for it.
"Auntie, please keep it for yourselves. You have children at home. Let them eat more. I won't need it."
Aunt Chen shoved the bowl into Jian Shu's hand and said, "I made a lot at home and saved some for them. This is for you. Don't be polite to me."
Jian Shu couldn't refuse and said, "Then Auntie, please wait a moment. I'll go and clear the bowl and return it to you."
After saying that, he ran to the kitchen without waiting for Aunt Chen's reply and put the meatballs on a plate.
He cleaned the bowl again and filled it with the pickled fish he had just made.
He returned to the door and handed the bowl to Aunt Chen: "Auntie, I was lucky enough to buy a fish today. This is the pickled fish I just made. Take it home and try it."
Aunt Chen refused, "Shushu, just eat it yourself. I'm not after this."
Jian Shu: "Auntie, I know you are doing this for my own good, and this is a token of my appreciation. Please take it back and order some extra dishes."
After hearing this, Aunt Chen had no choice but to accept it: "Then Shushu, I'll go back first. You should eat first. The meatballs are better when they are hot."
Jianshu: "Okay, then take care, Auntie."
He turned around and went back to the kitchen. He filled a large bowl of rice, poured some pickled fish soup, mixed the soup with the rice, and finished two bowls of rice. He was full.
Put the remaining meatballs and pickled fish in the kitchen cabinet. Now that the weather is getting colder, the vegetables will not spoil easily if left outside.
Jianshu is going to have hand-rolled noodles tomorrow morning, using pickled fish soup as the base. Add some greens and meatballs to the noodles, and it'll be another hearty breakfast.
After dinner, Jianshu entered his space again. After washing up, he lay on the bed and felt a little bored.
I've been busy these past two days, with one thing following another. Now that I suddenly have some free time, I don't know what to do.
