Chapter 17 Showing Off Your Skills

When the water boiled, Jiang Ning first put the pig's tongue in to cook, and then added the pig's stomach, large intestine, pig's heart, pig's liver, and pig's kidneys in that order. When it boiled again, she added the potatoes and black fungus and cooked for three or four minutes before stopping. After that, she let them soak in the brine. The longer they soaked, the mellower the flavor.

Fortunately, this brine can be reused, otherwise Jiang Ning would go bankrupt just buying these spices.

The braised dishes have been soaked for almost an hour and it is time to have lunch. They invited Uncle Zhou and Aunt Pei to have lunch together last night to let them try the flavor.
