Chapter 23 Stir-fried Sauerkraut with Minced Meat
Tang Yiyi was chopping chili peppers in the shop; the sun wasn't too strong outside yet.
She chose long, red chili peppers, because only those peppers will make the dish both fragrant and spicy.
Putting on gloves, she began chopping the chili peppers, otherwise the spiciness would burn her hands all day. She diced the red chili peppers, minced the garlic, added enough salt, mixed well, and then put it into a clean glass jar, sealing it tightly.
Many people here prefer strong flavors, and some customers have commented that the home-style dishes we usually make are too bland.
Making this condiment for rice well will attract more customers.
"Excuse me, are you hiring here?" Tang Yiyi looked up at the door when she heard the noise.
Song Man was a little reserved. She had graduated this year and had been looking for a job for several months. She only came in after passing by this restaurant and noticing the job posting at the door.
"I confessed!" Tang Yiyi put the glass jar in the refrigerator and said with a smile, "Please sit down, don't be nervous."
Seeing that the other person was about the same age as her, Tang Yiyi asked, "Why do you want to work at the restaurant?"
She is right to want to hire people as soon as possible, but she hopes that the people she hires are genuinely passionate about the catering industry, rather than complaining about the hardship and giving up easily after a few days.
Upon hearing this, Song Man introduced herself, "Boss, let me introduce myself, my name is..."
After briefly explaining her predicament, Tang Yiyi was willing to give her a chance, saying, "Stay here first, and we'll discuss your salary and other matters."
After discussing it for a while, Song Man was quite satisfied with the salary. In addition, the boss seemed easy to get along with, speaking softly and gently, unlike some of the company's leaders who were good at manipulating people.
"Can I start work today?" Song Man asked.
Tang Yiyi thought for a moment and said, "Okay, consider today a trial period and include it in your salary."
To put Song Man's mind at ease, Tang Yiyi went to a print shop and printed two copies of the employment contract, keeping one for herself and giving the other to Song Man.
Song Man had reviewed it and found no problems. "Boss, let's sign the contract."
Before signing the contract, Tang Yiyi reminded her, "You need a health certificate to work, so please get it done as soon as possible."
"Boss, I'll take care of it tomorrow."
After signing the contract, Tang Yiyi put it away and went to look at the tea eggs. The aroma of the braising sauce was irresistible. Part of the shell was broken, revealing the dark brown egg white. She poked it with her chopsticks and said, "Hmm, it's ready."
I caught a glimpse of Song Man sweeping the floor, and she seemed quite focused.
Wang Juan was rushing to the restaurant, afraid that she would end up like yesterday, not getting any tea eggs and returning home looking disheveled.
Fortunately, when we arrived, the restaurant wasn't crowded, unlike the terrifying situation yesterday.
Tang Yiyi was deeply impressed by Wang Juan and would come to buy tea eggs every morning.
"Still tea eggs today?"
Wang Juan nodded, "Give me six..."
Xiao Bao is still sick at home. Are six tea eggs not enough? Besides, my husband doesn't believe that a single tea egg can taste that good.
"Boss, give me ten tea eggs!" Wang Juan changed her mind.
Song Man was packing tea eggs for a customer when Tang Yiyi asked her to divide them into several bags, and naturally noticed the surprise on her face.
"Your tea egg!"
As Song Man handed the tea egg to the guest, her mind was a bit of a mess. Was the tea egg really that delicious? Or was it because the guest had a large family?
Seeing this, Tang Yiyi took a tea egg out of the pot. After the tea egg cooled down, she handed it to Song Man, saying, "Try it. You haven't had breakfast yet, have you?"
Song Man carefully took the tea egg and said, "Thank you, boss!"
The tea egg had a strong marinade flavor. Song Man thought it was even more fragrant than the braised food shop near her home. Holding a tea egg, she easily peeled off the shell along the crack. The egg white was light brown with a brownish pattern on the surface. The egg white looked soft and elastic, and it tasted just as good, with a tea aroma and a delicate texture. The yolk was different; it was sandy, sticky, and salty.
Even the yolks are so delicious! No wonder she ordered ten tea eggs earlier. If she had more money, she probably would have bought more than ten! I could eat them for a week straight without getting tired of them.
Over there, Wang Juan was carrying several bags of tea eggs, carefully protecting them. Especially when she got on the subway, everyone on the train looked over and stared at her tea eggs.
An old man asked, "Young lady, where did you buy these tea eggs?"
Wang Juan didn't hide anything too much, "I bought it from a shop near the entrance of Xingguang Primary School."
Upon hearing this, the elderly woman sincerely said "thank you," and then called her son to say she wanted to go eat tea eggs.
Liu Xiaobao is sick at home today. His parents gave him a day off. He is lying in bed with an empty stomach, but he doesn't feel like eating anything.
Mr. Liu held up a steamed bun and waved it in front of him, "These smell delicious, son, do you want some?"
Seeing that Xiao Bao turned his head to the other side and didn't even glance at the xiaolongbao, Liu's father took a small bite of the xiaolongbao. The rich juice burst in his mouth, and the freshness of the soup and the aroma of the meat filling filled his entire mouth. The skin was thin and the filling was plentiful.
Liu's father inadvertently showed off two xiaolongbao (soup dumplings), and deliberately said, "Xiaobao, these xiaolongbao have thin skins and generous fillings. Didn't you crave them the most when you were little?"
Liu Xiaobao turned his head and looked at the steamed bun he was holding. The bottom of the bun was glistening with oil, making the skin look incredibly tempting and delicious.
"No, it looks so oily!" Liu Xiaobao threw a tantrum.
Helpless, Mr. Liu: "..."
You little rascal, your dad didn't even get to eat xiaolongbao when he was a kid! You really did raise a little devil.
Just then, there was a noise at the door. When Liu's father went out, he saw that his wife had returned, carrying several bags of things that smelled surprisingly good.
“Xiao Bao, he’s not eating,” Liu’s father complained.
Wang Juan smiled mysteriously, "It's okay, Xiao Bao will be willing to eat the things I brought back."
Liu's father: "..."
He didn't believe her, but seeing his wife's confident demeanor, he went over to see for himself.
Although Liu Xiaobao was very hungry, he had no taste in his mouth and resisted whatever food was offered to him.
Until Wang Juan came over, opened the bag, and the familiar aroma of braised food wafted out. Liu Xiaobao, lying on the bed, smelled it and exclaimed, "That smell is so familiar..."
He leaned forward, brought his nose close, and took a deep sniff.
Wang Juan smiled. These are tea eggs, a powerful remedy for Xiao Bao!
Liu Xiaobao was both surprised and delighted. "Mom, it's a tea egg! I want to eat it!"
The light returned to his eyes.
When Liu's father, who had come along, saw this, he thought, "..." Aren't steamed buns delicious? A tea egg is just so-so.
Liu Xiaobao held up the tea egg, took a big bite, his cheeks bulging, not afraid that he wouldn't be able to finish it.
After finishing one, I reached into the bag.
Wang Juan was in a good mood when she caught a glimpse of the faint mockery in her husband's eyes, and she immediately became angry.
She peeled a tea egg and stuffed it directly into Liu's father's mouth.
A bewildered Mr. Liu frowned, "This is..."
Halfway through his sentence, the aroma of spices mixed with a faint tea fragrance wafted over. Liu's father opened his mouth, took a bite of the tea egg, and found the egg white, dipped in the braising sauce, to be delicate, delicious, and very smooth.
He didn't really want to eat the egg yolk, but he didn't want to waste food, so he forced himself to eat it.
Hmm, it didn't have the eggy smell I expected, nor the unpleasant herbal smell; instead, it had a strong aroma of spices.
Liu's father ate one in no time and then wanted to get another.
Wang Juan slapped his hand and said irritably, "Isn't it bad? Why are you eating it so enthusiastically!"
Mr. Liu immediately apologized, "Wife, you bought a good tea egg. I didn't know its value!"
"snort!"
Wang Juan was too lazy to argue with him; she wanted to eat tea eggs.
As mealtimes approach and peak dining hours arrive, the number of takeout orders will also increase.
Tang Yiyi was already quite skilled and used to it. Noticing that Song Man was a little nervous, she reassured her, "It's okay. You'll get used to it after a while. Don't worry too much."
Song Man really wanted to stay and work at the restaurant.
When the guests arrived, Tang Yiyi asked Song Man to go to the front desk to collect the cash and pack the food, while she took charge of all the food preparation in the kitchen.
The cash register made two ringing sounds.
Song Man glanced at it, then turned to Tang Yiyi in the backstage area and said, "Boss, we have a takeout order!"
"One order of stir-fried pickled cabbage with minced pork, with the customer requesting medium spicy, saying they can handle spice, the spicier the better!"
Upon hearing the note, Tang Yiyi smiled. The chili peppers she had chosen were very spicy and had a long-lasting aroma.
If the guest can eat spicy food, of course we should satisfy his request!
Heat oil in a wok, add minced garlic and sauté until fragrant. Add diced lean meat and stir-fry until it changes color. Then add chopped pickled cabbage and stir-fry quickly to enhance the flavor. Add some salt, then add chopped chili peppers, and finally remove from heat.
Song Man packed up the food, and a strong sour and spicy aroma wafted over, enveloping her tightly. The light brown pickled cabbage, the dark brown minced meat, and the deep red chili peppers looked very appetizing.
When Xiaoyu returned, Tang Yiyi introduced him, "Xiaoyu, this is Sister Manman."
"Hello, Sister Manman~" Xiaoyu greeted in a childish voice.
Song Man: "Xiao Yu, hello there!"
With someone to help, Tang Yiyi solved the problem of online delivery and dine-in, allowing customers to receive their meals as soon as possible and enjoy hot food.
