Chapter 36 Making Braised Food

After deducting the wild boar meat that was given away and the wild boar meat that was kept at home, the remaining wild boar meat weighed about 150 catties and was sold for a total of 4.5 taels.

During the famine, even Li Dagen's family, who had once been the village head, did not have this much money.

Wan Shu and his family suddenly became the wealthiest family in the entire village.

So while the five children were pleasantly surprised by the five boxes of pastries Wan Shu brought out in one go, they weren't too astonished.

After the cheers subsided, they became even more curious about the two wooden barrels that Wan Shu had brought back, and the bags inside them that smelled particularly pungent.

"Mother, we already have baskets at home, why do we need to buy a wooden bucket?"

What is this long, red bag?

"And this bag of black stuff, why does it smell so pungent?"

Wan Shu had already prepared an excuse for this.

"The red stuff is a seasoning called chili pepper, and the black stuff is various spices."

“My mother just met a strange person in the county town. That person said that using these things to make pig offal would taste especially delicious.”

“Now that we’ve sold the wild boar, we’re rich, but we can’t just sit around and do nothing. Anyway, offal is cheap, so Mother wants to try making it the way that person suggested.”

"If it really tastes good, then we'll use these two wooden buckets to take the cooked pig offal to the county town to sell tomorrow."

Wan Shu plans to sell braised pork offal.

Braised food is delicious and convenient; you can braise a large pot at once, and the braising liquid can be reused repeatedly.

The only troublesome thing is that the broth needs to be carefully prepared when making the braising liquid for the first time.

She asked Er Ya to clean the chicken carcasses she bought from the mall and put them in a pot to stew.

She simmered the chicken for a full hour, creating a large pot of rich and fragrant broth, before finally removing the chicken bones and adding various seasonings.

It contains the flavored oil she just made with scallions, ginger, and cilantro, as well as salt, soy sauce, caramel coloring, and essential spices and dried chili peppers.

After adding the seasonings, you can't start braising immediately. You need to let the aromas of the various seasonings fully blend together. Once you're sure it's the flavor you want, then add the cleaned offal.

And you shouldn't eat it immediately after turning off the heat.

As the saying goes, three parts braising, seven parts soaking.

The essence of braising lies in soaking. When the ingredients are 90% cooked, turn off the heat and let them simmer in the residual heat. This allows the ingredients to absorb more of the braising liquid, making them even more delicious.

The process was complicated, and Wan Shu spent an entire afternoon braising the ingredients.

It wasn't until late afternoon that she cut out a plate of braised food and called to her five children who were still working.

"Stop busying yourselves, everyone come and have a taste."

Pig offal is a worthless thing, so Dazhu and his friends have eaten it before.

In their minds, although offal is meat, it smells terrible and is not as tasty as wild vegetables.

So when Grandma said she was going to try her hand at doing business with pig offal, they didn't have much hope.

But to everyone's surprise, as Mother prepared it, the usually smelly pig offal emitted an irresistible aroma! They were so tempted that they could hardly contain their drool!

Upon hearing Wan Shu say that it was time to eat, they rushed to the kitchen as quickly as possible, each grabbing a large piece and stuffing it into their mouths.

As the braised food entered their mouths, all five children stared wide-eyed in astonishment.

Si Ya: "Wow! It not only smells delicious! It tastes amazing too!"

Er Ya: "This pig offal doesn't smell bad at all! It's nothing like what we used to eat!"

Dazhu: "It tastes even better than fatty meat!"

Wu Ping: "Waaah, it's so delicious I wish I could swallow my tongue!"

San Shun, as always, knew how to focus on the key points, his eyes shining: "Mom, your braised pork offal smells so good! If we take it to the county town, lots of people will definitely buy it! No! Maybe it'll be snatched up as soon as it's taken out!"

Wan Shu was very confident in her skills; she knew that with her craftsmanship, someone would definitely buy her products.

But having done so much business, she wasn't as naive as San Shun, thinking that her business would boom as soon as she arrived in the county town.

In the morning, while she was buying roof tiles with Dazhu and Erya, she took the opportunity to observe the cooked food market in Sishui County.

There are two types of customers at the cooked food market in Sishui County.

The first type of customers is the poor. Generally speaking, this group consists of poor families who work in the county town and can only afford to spend a few coins on each meal, just enough to fill their stomachs.

The second type of customer is the wealthy.

This group consists mostly of wealthy businessmen or well-off families in the county town who are willing to spend money on fine food in the market.

Wan Shu's braised pork offal is inexpensive to produce, and she plans to sell it for 40 coins per pound.

This price is only half the price of a regular cooked meat dish.

But it's clear that it's something that the poor can't afford.

In other words, her target customers are the wealthy in the county.

The wealthy have a stereotype that pig offal is unpalatable and beneath them, and they will avoid it if they see it.

Opening up this market is not an easy task.

It seems that besides braised pig offal, she also needs to find a way to make some other eye-catching food.

We can't come up with a solution for this in a short time.

Wan Shu, whose five children were too idealistic about her, wanted to hear other people's opinions on her braised food to see if there was room for improvement. So she cut two large bowls, had Wu Ping take one to the Wan family for feedback, and took the other to the edge of the field.

Invite the villagers who are still busy in the fields to come and try it.

These villagers could smell the delicious aroma wafting from the Liang family's house starting in the late afternoon.
